发面版油条

厨娘群主Luoluo的原方,我按我家需求略改了一下。

材料 (可做16-20根油条):
- 中筋面粉(All-Purpose Flour)4杯
- 盐2小勺,泡打粉2小勺,酵母2小勺,糖2大勺
- 鸡蛋2个,牛奶1杯半(微波炉加热30秒)
- 植物油少许整形用;宽油油炸用


工具: 
Stand-Mixer1台,搅拌盆1口,擀面杖,筷子

制法:
1. 面粉加盐,泡打粉,酵母,糖混匀。加鸡蛋,温牛奶,搅拌揉成团,可按手感适量再加面或水,最后面团应该很柔软。面团表面涂上油,盖好保鲜膜放温暖处(烤箱开灯)发至两倍大(30-45分钟)。

​2. 粘板抹油,面团发好后拿出来切两半,每块轻轻做成4-5厘米宽,5-7毫米厚的长条,横向切成1-2厘米宽的小条,把两个小条叠在一起,中间拿筷子压一下,两头捏紧,拉长一点。做好后再让面条醒15分钟。

3. 锅里加植物油,高温油炸,用筷子翻动,两条都金黄色即捞起,沥油稍冷却后可食。可以做16-20根油条。

用时:约1个小时

​附量器标准:
1杯 = 240 ml = 240 c.c.
1大勺 = 1 tablespoon = 15 ml = 15 c.c.
1小勺 = 1 teaspoon = 5 ml = 5 c.c.
适量或少许约 = 1/8 teaspoon
